Surprise.
No, unfortunately it isn’t Saturday yet.. HOWEVER, I am now starting a mid week post in addition to the usual Saturday secrets ;) Saturday’s will be mostly style/girl talk posts and mid week will be dedicated to recipes/health.
SO, let’s get to it. Some of you may be starting to get into a routine of hitting the gym hard allllll week which can leave you feeling exhausted. DONT GIVE UP. Keep at it. In a month or so you will be SO happy you did.
To make things a little easier for you, I’m sharing one of my favourite breakfast recipes.. Overnight Quinoa.
It’s super quick, easy, delicious AND nutritious. Mix this up every night before you go to sleep. Your morning self will thank you.
Overnight Quinoa
Ingredients:
- 1/3 Cup cooked quinoa {Pre-cook a larger amount and use it over a few days}
- 1/3 Cup unsweetened coconut milk {I use the Silk brand}
- 1 Tbs. chia seeds
- 1 Tsp. vanilla
- Drizzle of maple syrup
- Couple shakes of cinnamon
Mix it up well. Let it sit in the fridge overnight. In the morning give it a good stir and add your add-ins of choice :)
Add Ins:
- 1/2 sliced banana
- Coconut
- Sliced almonds
- Blueberries {really any type of berries or fruit you like}
- Peaches
- Cacao Nibs
- Gogi berries
Another variation I lovvvvve on chilly mornings is to add chopped apples, a bit of unsweetened apple sauce, more cinnamon and sliced almonds. Then warm the quinoa mixture in the microwave. HEAVEN.
