I hope that two things happen this weekend:
1.} You invite the girls over for a proper summer send off party
2.} You make these EASY + healthy zucchini fritters for an appie
You guys they are SO good. I can’t even handle it.
Perfect, yet healthy appie to snack on.
Pair with a Pinot Grigio and you’re golden.
Let’s get into it.
Healthy Zucchini Fritters
Ingredients:
- 1 zucchini
- 1 egg
- 1/3 cup sliced green onion
- 1/2 cup flour {I only had whole wheat on hand, ran out of GF :( }
- 1 garlic clove {minced}
- Salt
- Pepper
- 2 tsp oregano {dried}
- 2 tsp parsely {dried}
- Vegetable oil OR Coconut oil
TIP: You can use fresh herbs too, I used fresh parsley and just tossed in a small fistful.
Makes 9 fritters.
Directions:
- Okay so first off grate the zucchini, using the large side of your grater, into a colander. Squish out as much water from the grated zucchini into the sink. Toss the grated zucchini into a large mixing bowl and sprinkle with salt. Set aside.
- Add a generous amount of whichever oil you’ve chosen, coconut or vegetable, to a large sauté pan. Turn it up to Med-High heat. Make sure the oil coats the entire pan.
- Add in the egg, green onion, flour, garlic, salt, pepper, oregano and parsley to the mixing bowl. MIX IT UP.
- Line a plate with paper towels.
- Sprinkle the sauté pan with some water to see if it’s ready. Once the oil is hot, spoon approx. a 3 tablespoon scoop of the zucchini mixture into the pan and flatten to a pancake-like shape. I was able to fit 4 fritters on my sauté pan at once.
- Let em cook for about 2-3 minutes each side until golden brown on each side. Then transfer to the paper towel plate and sprinkle immediately with salt.
- If you wanna crisp ’em up even more, turn on the oven to high {approx 425 F} and bake on tin foil for about 5 minutes until crispy ;)
- Serve immediately with Greek yogurt OR the following Dairy-Free Pesto Dip.
Dairy-Free Pesto Dip
Ingredients:
- 2 heaping tbs of dairy-free plain unsweetened yogurt OR Greek yogurt
- 1 tbs pesto
- 1 tsp garlic {minced}
- Squirt of fresh lemon
- Salt
- Pepper
Directions:
- Just mix it all up girl.
TIP: I also suggest trying the above but instead of pesto use fresh dill…. YUM
