The BKT Salad

Best Kale Salad Ever.

OK I know it isn’t Saturday {boo} BUT I could not wait to share this recipe.

I was craving a BLT so so bad but not craving the calories. So instead I cut the bread and came up with this.

It’s unreal. Quite possibly the best kale salad I’ve ever had and SO tasty!!

NOTE: For dinner, start this in the morning or around noon and let the Kale+Vinaigrette marinade throughout the day. Kale can be bitter and quite firm, to avoid this let the vinaigrette do all the work and break down the kale a bit. 


  • 1 bundle of Kale
  • 4 slices of Pre-cooked Bacon {I used Kirkland Costco but ReadyCrisp is really good too}
  • Handful of cherry tomatos {chopped}
  • Lemon Vinaigrette {see below}


  1. Mix up the Vinarigrette first {see below}.
  2. Chop the Kale
  3. Place in a large salad bowl and pour the vinaigrette over the kale
  4. Let sit throughout the day
  5. When ready for dinner, microwave the bacon, chop it up and toss into the salad bowl along with the tomatos.

VOILA! Dinner is served.


Lemon Vinaigrette

TBH… I literally don’t measure when I make dressings.. but obvi I’ll guesstimate for you.
You’re the chef. Alter it to your liking :)

  • 2 tbs extra virgin olive oil
  • 1.5 tbs lemon juice
  • Pink Himalayan salt {a couple dashes to taste}
  • 1 tbs of pesto {homemade or I like Costco’s Basil Pesto}
  • 1 tbs chopped white onion
  • Black Pepper {to taste}
