Okay did you read my post on nuPasta? GO READ IT. It’s revolutionized my diet. I can now satisfy my pasta cravings WITHOUT the added calories or gluten and I don’t feel like a glob after.
Anyways, I explain all about nuPasta in that post I’ve linked above but, along with it, I had posted my “go-to nuPasta recipe”… which is still awesome but I’ve created a NEW recipe that is SURE to make your tastebuds twerk.
Ohhhh my gosh. I’m not sure how to even explain this recipe. It’s earthy, interesting, tangy and bursting with flavor. Plus high in protein and low in carbs cause duh.
Let’s get to it.

Anything for you boo.
- 1 head of Cauliflower {roughly chopped}
- 1/2 white onion
- 2 cloves of minced garlic
- 1 pack of extra lean ground turkey
- Dash of dried parsley
- Dash of dried basil
- olive oil
- salt and pepper {to taste}
- 2 handfuls walnut pieces
- 1/2 tbs lemon juice
- A few drops of white wine vinegar
- 3 tbs of pesto {kirkland}
- 2 packs of fettuccine nuPasta
- Handful of fresh herbs {chives, parsley, thyme}
- Crumbled low fat feta {optional}
- White truffle oil {optional}
- Preheat oven to 375 F and line an oven tray with foil. Place the roughly chopped cauliflower on the tray. Coat cauliflower with salt and pepper and drizzle with olive oil.
- Bake cauliflower for 40 minutes, flipping half way through. At that time, add walnut pieces to the tray as well.
- While cauliflower is in the oven, coat the bottom of a pasta pot with olive oil. Chop onion and toss into the pot along with the garlic.
- Add the turkey, dried parsley, dried basil, salt and pepper and cook through on medium-high heat.
- Once the cauliflower and walnut pieces are done, add them to the pot with the turkey. Reduce heat and add lemon juice, white wine vinegar. Stir to combine.
- THOROUGHLY rinse fettuccine nuPasta in the sink with cold water. Then add to the pot along with the pesto and fresh herbs. Remove from heat and stir. At this time I added a drizzle of white truffle oil because I LOVE the flavor it brings out and I had some on hand. #YUM
- Add crumbled feta prior to serving, pour yourself a glass of white wine and ENJOY!
