OMG I am SO HAPPY I tried this recipe out.
Diet life just got WAY better. If you’ve been following me along, you know I have a wedding coming up… MY WEDDING. AKA why I’m kicking my butt into gear. I was on a downward spiral full of nacho binging and life got out of hand/unhealthy.
But I’m back. With a secret power.
WEIGHT WATCHER CINNAMON BUNS
So no. I haven’t signed up for weight watchers. BUT I’m following their points system with the help of our most loyal friend, the Internet.
If you want more info on exactly what I’m doing to shed my winter weight, COMMENT BELOW. I’ll write a post explaining exactly what I do.
ONTO THE ROLLS!!!
Now, these are not sickly sweet. WHICH IS WHY I LOVE THEM. They are the perfect treat after dinner and only 3 Smart Points. People who don’t know a thing about the point system, that is a pretty healthy treat.
- 1 cup non fat UNSWEETENED plain greek yogurt
- 3 cups self rising flour {I use the Brodie brand one from Superstore}
- 1 cup unsweetened almond milk
- 6 tbsp butter
- ½ cup stevia
- ¼ cup brown sugar
- 1 tbs cinnamon
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 1-2tsp unsweetened almond milk
- Preheat oven to 375 F.
- Mix flour & yogurt in a bowl.
- Add milk.
- Add more flour if it's really sticky.
- Put dough on a floured board & knead.
- Spread dough into a rectangle.
- Spread softened butter on dough {I used my fingers for this part}.
- Combine Stevia, brown sugar & cinnamon then sprinkle over buttered dough.
- Roll on the long side & press the edges together. Cut the roll into 20 pieces & place cut side down in pan sprayed with coconut oil PAM.
- Spray tops of the rolls with coconut oil PAM.
- Bake 20-25 mins.
- Mix glaze ingredients and frost when warm out of the oven.
- I USED MORE FLOUR. So. Funny moment. I took the dough out of the bowl and onto my wooden board... it stuck EVERYWHERE. Panic mode, I added more flour {no I don't know exactly how much as I was panicking}. Basically to the point of not being sticky anymore.
- Have fun ;)
