Love Muffins

Happy Saturday my little muffins!!

Speaking of muffins…. who doesn’t love English muffins for breakfast? With egg {or egg white}? Maybe some low fat cheddar? Mmmmm ham too.

WELL, I have something for you. This is a super quick and easy healthy breakfast sandwich recipe. You know EXACTLY what is in them AND they are for mornings that start with the snooze button… multiple times :|

So get to the kitchen and follow along, we’re gunna make some Love Muffins this morning

Love Muffins

Ingredients:

  • 6 English muffins {Dempsters or weight watchers}
  • 6 Eggs or 1 carton egg whites
  • 6 slices low fat cheese {maybe some feta, whateva you want}
  • 12 thin slices of lean deli ham
  • Salt
  • Pepper

{Feel free to add whatever your heart desires. Maybe some pesto spread? caramelized onion? The world is your oyster}

Directions:

  1. Preheat your oven to 350 degrees
  2. Spritz 5 ramekins {or a jumbo muffin tin} with cooking spray and place on a cookie sheet
  3. Crack one egg OR pour egg white to 1/3 of each ramekin. If using egg, pierce each yolk and lightly whisk.
  4. Season each with salt and pepper
  5. NEXT, grab those English muffins, slice in half and line em up on a cookie sheet.
  6. Pop the egg cookie sheet and muffin cookie sheets into the oven. Toast those muffins while the eggs are baking, for about 8-10 minutes. {Just keep an eye on them}. Remove from oven and let cool.
  7. Bake the eggs for 12-15 minutes or until set. Remove them from the oven and allow them to cool slightly. Pop each egg out of the ramekin, carefully, with a knife. Let these babies cool while we prep the rest.
  8. Layer each muffin half with one egg, 2 slices of lean deli ham and one slice of cheese.  Top with the other English muffin half.  Wrap tightly in plastic wrap and place in the freezer.
To reheat:  Remove plastic wrap from the frozen breakky sandwich and wrap in a paper towel.  Microwave at 50% power for about a minute, flip over and microwave again at 75% for about a minute more. Depends on your microwave so just feel it out girlie ;)
