So it’s crazy cold. WHYYYYYY, ugh.
Let’s not dwell. It’s Saturday, we are ALL {hopefully} snuggled in blankies with hot coffee or tea watching documentaries + Netflix.

PLUS WE HAVE A RECIPE ON THE BLOG TODAY!

It’s Thanksgiving on Monday #YES, and maybe we are hosting the entire family for dinner. Maybe even hosting the in laws for the whole weekend?
Well I try to help when I can and breakfast is something I do well. Especially when it comes to pancakes. This recipe is SO GOOD for Fall season.
Make these pumpkin spice pancakes now and freeze them OR whip this recipe up in no time for breakky.

So basic, cause that’s what PSL season is all about anyway right?

 

ALSO, MAJOR LIFE HACK. if you’re looking at this and thinking, ‘listen I already dove head first into the Pumpkin Spice Baileys what do you mean cloves, ginger and baking soda?’

Grab your favourite pancake mix {I use Krusteaz from Costco} add the ingredients it calls for PLUS THESE:

1 cup pumpkin puree

2 tsp cinnamon

1/2 tsp nutmeg

1 tsp vanilla

done.

Totally Basic PSL Pumpkin Spice Pancakes
Totally #Basic recipe for your seasons PSL pancake fix. Perfect for Thanksgiving morning or pretty much any day of the week.

Ingredients
  1. 1 1⁄4 cups all-purpose flour
  2. 2 tbs sugar
  3. 2 tsp baking powder
  4. 1⁄2 tsp cinnamon {more like 1tsp if I'm being honest}
  5. 1⁄2 tsp ginger
  6. 1⁄2 tsp nutmeg
  7. 1⁄2 tsp salt
  8. 1 pinch clove
  9. 1 cup unsweetened almond milk {I use Silk}
  10. 6 tbs canned pumpkin puree {I sneak in a bit more TBH..}
  11. 2 tbs melted butter or vegan alternative
  12. 1 egg
Instructions
  1. Add all of the dry ingredients together; flour, sugar, baking powder, spices, salt.
  2. In a separate bowl whisk together the milk, pumpkin, butter & egg.
  3. Fold mixture into the dry ingredients.
  4. Spray or grease skillet over medium heat and pour approx 1/4 cup of the batter per pancake.
  5. Cook about 3 mins a side or until the batter starts slowly bubbling.
  6. Serve with butter, syrup, a dollop of coconut whipped cream & a sprinkle of cinnamon.
