Quick Baked Apple Dessert {For One}

Baked Apple Dessert

The post-dinner sweet cravings are deadly. This baked apple dessert saves me during spring slim down. Super easy, super quick and suuuuuuper delicious.

Ingredients:

  • 1 apple {I prefer Royal Gala}
  • 1 tbs. water {or low fat apple juice if you’d like}
  • 1/2 tsp. of cinnamon {I put a little extra cause I love it}
  • 1 tsp. Earth Balance coconut spread {or really a little bit of butter isn’t gunna hurt}
  • Maple Syrup
  • Splash of coffee creamer {I use Silk French Vanilla}

Optional: Mix up oats, softened butter, brown sugar {1tbs. of each} and a pinch of cinnamon then set aside.

Directions:

  1. Slice the apple in half. Cut out the seeds and core. Place face up in a microwavable bowl.
  2. Pour the water in and around the apple halves.
  3. Place a bit of the Earth Balance coconut spread into each apple half hollow.
  4. Sprinkle as much cinnamon on top as you would like.
  5. Microwave for about 3 minutes, depending on your microwave strength. Then let sit in the microwave for a few minutes to cool before taking it out.
    {IF you would like the oat topping, place on top of each apple half now and microwave an additional 30 seconds}
  6. Spoon the sauce collected in the bowl on top, drizzle maple syrup and add a splash of coffee creamer.

Try adding coconut flakes, cacao nibs, dried cranberries, granola. Basically anything. Another variation I love is to use PEARS instead of apples… Unreal.
