HOLIDAY BAKING DAY!!!!!

Pour yourself a cup of coffee, crank up the Christmas tunes and let’s get baking!!! Every single year I bake during the holidays. Even if I’m INSANELY busy. I’ve mastered the art of great baking that is super quick & easy. TWO out of the three are no-bake as well!!!

I feel like I can’t explain just how much these recipes are loved. I am asked time and time again for the recipes. I guarantee your company will be gobbling these recipes up quicker than an elf on Christmas Eve. So let’s get started!!!

Peanut Butter Crunch Truffles

These truffles are a HUGE hit. Everyone gravitates towards them and always ask "how do you get the inside so fluffy?!". Magic.

Ingredients
  1. 3 cups powdered sugar
  2. 2 cups creamy peanut butter
  3. 3 cups Rice Krispies {I used vanilla flavored}
  4. 1/2 cup melted butter
  5. 2 cups of chocolate chips {enough to melt and roll the truffles in. You can always add more if needed}
  6. Sprinkles! {Red, green, silver, gold; so festive}
Instructions
  1. Mix together the powdered sugar, peanut butter, Rice Krispies and melted butter in a large bowl.
  2. Once mixed, melt the chocolate chips using a double boiler. Make sure you’re constantly stirring the chocolate chips to get the perfect consistently.
  3. Let the rolling and dipping begin!
  4. Place on a parchment paper lined cookie sheet
  5. Sprinkle with red and green sprinkles :)
  6. Pop them in the fridge {or outside} for a solid hour-ish
  7. ENJOY! ;)
Notes
  1. ** For the rolling, I roll the truffle in my hand, then pop it into the chocolate, using a spoon I roll it around. Once it's covered I quickly spoon it out and onto the cookie sheet it goes. **
  2. **Okay this recipe makes a TON, so half it or make the full amount and freeze some for future use :)**

Ingredients
  1. 1 Betty Crocker Sugar Cookie Package
  2. 1 Pistachio pudding Jell-O Mix Package
  3. 2 eggs
  4. 1/4 cup melted butter
  5. 1/2 cup dried cranberries
  6. 1/2 cup shelled pistachios
  7. 1/2 cup white chocolate chips
Instructions
  1. Preheat oven to 350 F
  2. Mix the cookie package, pudding package together
  3. Add in the eggs and melted butter
  4. Mix it up girl
  5. Fold in the cranberries, pistachios and white chocolate chips
  6. Drop rounded spoonfuls onto a parchment paper lined cookie sheet
  7. Bake for 8-10 minutes. They will look underdone when you remove from the oven but TRUST ME, the one way you can ruin these is by over baking them
  8. Let them sit on the cookie sheet for 2 minutes
  9. SERVE. Make sure you save some for Santa. Little trick to get those Stuart Weitzman suede knee highs you’ve been swooning over.
Notes
  1. Instead of shelled pistachios, I have even used a Maui Mix which included macadamia, walnuts and almonds too. Basically any fav nut works if you can't find those pistachios!

Super quick, no-bake, last minute, hectic holiday recipe! This decadent pb & chocolate creation with suspended mini marshmallows and crunchy nuts is too good to be true.

Ingredients
  1. 1/3 cup butter
  2. 3/4 cup creamy peanut butter
  3. 2 cups chocolate chips
  4. 1 bag mini marshmallows {250g}
  5. 1 cup roasted peanuts or whatever nut you'd like (optional)
  6. 1/2 cup dried unsweetened or sweetened coconut (optional)
Instructions
  1. Lightly grease a 9x9 pan and line with parchment paper.
  2. Dust the bottom with 1/4 cup of the coconut, if you are using it.
  3. Melt the butter and peanut butter together on the stove, then melt in the chocolate chips. As soon as the chocolate chips are melted, remove from heat. Don't overheat the mixture!
  4. Combine the marshmallows and peanuts in a large mixing bowl.
  5. Pour in the chocolate mixture and fold until the marshmallows are covered with the chocolate mixture.
  6. Spread into the prepared pan and sprinkle the other 1/4 cup of dried coconut on top if you are using it.
  7. Chill for 3-4 hours before cutting into squares or bars.
Notes
  1. Coconut is optional! I like to think it looks like sprinkled snow for a fun holiday treat!
  2. PS These will freeze quite well so double the batch!
