So I have this recipe that I make and it’s such a hit.
Oh and it’s hella easy and insanely quick.
It’s also one of those ‘shoot, what am I going to serve with this main?!’ solutions.
PORTOBELLO PIZZAS
It’s the PERFECT side to a protein dish, or you can seriously eat it as a vegan meal alongside a hearty salad.
YUM.
I’m not saying I INVENTED the portobello pizza recipe but if you haven’t heard of them, I’m here to let you in on the secret.
Alright let’s get at it.
Portobello Pizzas

Ingredients
- 4 portobello caps {I pick them up from Costco in a pack of 4}
- 1/2 cup marinara sauce
- 1/2 cup pesto
- salt and pepper to taste
TOPPINGS
- whatever you like!
- sundried tomatoes
- parm
- {totally depends!! I love pepperoni slices and mozzarella as well}
Instructions
- Preheat the oven to 350 F
- Cover a baking sheet with aluminum foil
- Snap the stems off the portobello caps
- Brush the tops
- Place face up on the baking sheet
- Mix the marinara, pesto in a small bowl
- Spoon into each face up portobello cap
- PS Add more of each if needed to coat each portobello cap
- Sprinkle with salt and pepper
- Now is the fun part, add whatever toppings you'd like. Check below for more of my suggestions.
- Place in the oven for about 30 mins.
- I like to broil them for a final couple mins, KEEP YOUR EYE ON THEM.

Notes
- For toppings, whatever you have in your fridge, honestly. I have mixed it up so many times.
- IDEAS: pepperoni, mozzarella, olives, fresh basil, ham, pineapple, balsamic glaze, gouda, fig, blue cheese and walnut.
