Egg Roll in a Bowl

I’ve got THE best recipe for you this week. I’m not kidding it is so easy, so healthy and SO yummy.
It’s also boy approved {I know, I’m a wizard in the kitchen}.
You know the middle of egg rolls {spring rolls, whatever you wanna call em}? It’s so good right? Now imagine you could eat a bowl of it, minus the fatty deep fried coating.
WELL NOW YOU CAN!
So when you’re at a loss of what to whip up on a weekend night or your parents decide they wanna come over for dinner last minute {SURPRISE} do not panic, I got you covered.

Ingredients:

  • 1 lb extra lean ground pork or extra lean ground turkey if that’s what you have
  • 1 package of coleslaw mix
  • 3 stalks of celery
  • 1 medium onion
  • 3 cloves of garlic {maybe I used a bit more.. I like garlic okay?}
  • 1 tsp grated ginger
  • 3-4 tbsp Braggs Amino Acids {Just like soya sauce except NO ADDED SALT, and it’s amino acid rich. I use this alllll the time. It’s found in most major grocery stores ;)}
  • 1-2 tsp rice vinegar {essential}

Directions:

  1. Toss that ground pork into the skillet and cook until done. Remove from pan and set aside
  2. Add the onions, garlic and celery. Sauté nearly soft and nearly cooked entirely.
  3. Add the coleslaw mix and continue to cook about 15 mins.
  4. Mix in that ground pork.
  5. Add the ginger, Braggs Amino Acid and rice vinegar.
  6. Simmer about 5-10 mins
  7. Dish it up hot stuff!

***I also garnished with some sliced almonds. Nommmm. ***
